Very creamy and rich!
In a small sauce pot, whisk together:
2 cups soy milk
4 tbsp cornstarch
1/2 tsp instant espresso powder (deepens the chocolate flavor, optional)
1/2 tsp vanilla
1/3 maple syrup
1/3 cup cacao powder
Heat on medium, stirring constantly, until it thickens. Pour into 4 small plastic containers with lids. Chill and enjoy.
